
SYLVIA’S CRISPY TOFU
This is simple nourishment for everyday. Tofu supports Kidney and Spleen function, while onions and tomatoes help move Qi and clear internal heat for overall harmony.
Pat dry the tofu then sprinkle with some salt and set aside.
Make the sauce and set aside.
Heat the wok then add the oil. When the oil is hot add the tofu cubes and cook until slightly golden on all sides.
Remove the tofu and set aside.
Heat 1 tablespoon of oil in the wok, then add the onions. Cook over medium heat, stirring occasionally, until they become caramelized. If the onions begin to stick, add a splash of water.
Add the tomatoes and brown sugar and toss. If the mixture is too dry add a splash of water.
Add soy sauce and taste the mixture. I(f you like a sweeter taste add more sugar.)
Add the tofu back into the wok and toss well with the onion/tomato mixture.
Add the sauce and toss again.
