
CARROT STEW
The blend of carrots, onions, leeks, and garlic nourish the Spleen, move stagnant Qi, warm the body, and support digestive health.
2 Tablespoons of oil
1/2 Teaspoon of mushroom seasoning
1 Teaspoon of salt
3 Carrots, cut into 1 inch chunks
½ Onion, sliced into wedges
2 Cloves of garlic, chopped
1/3 cup of sliced leeks or scallions

Heat the wok and add the oil, salt and garlic.
Next add the carrots and onions.

Toss well for 1 minute then add the mushroom seasoning and the leeks.

Toss for another minute or two depending on the texture you'd like.

Serve over rice or as alone.
