Summer Cooking: Salmon

Summer is hot, muggy and sticky. Often we look to light salads to cool us down. But salad carries a cold essence, requiring our bodies to use more Qi for digestion. Here’s a great solution: fish! And if you’re still craving salad, add a vinegar or ginger-based dressing to warm it up.

Many types of fresh fish can be found in markets throughout the summer. Shellfish and salmon support the Kidney and are especially beneficial for men’s health. Topping the fish with plum tomatoes, pineapple or mango, gives the Heart an added energetic boost.

Try this simple recipe today:

Salmon with Scallions

1 bunch scallions, sliced vertically

2 lb organic salmon

2 cloves garlic

2 Tablespoons butter, melted

1 Tablespoon olive oil

salt and pepper, to taste

Cover the bottom of a baking dish (or grill pan) with scallions. Lay salmon over the top. Top with garlic, butter, olive oil, salt and pepper. Bake at 350 (or grill) for about 12 minutes or until the fish easily flakes with a fork.

Optional:

Add chopped tomatoes to the dish prior to cooking or omit the garlic and top the cooked fish with a slaw made from mango, pineapple and jalapeno pepper. Delicious!
