
EASY ZUCCHINI AND PASTA
Pasta with zucchini offers gentle nourishment for the Stomach while supporting smooth digestion and steady Qi.
From a Traditional Chinese Medicine perspective, zucchini’s cooling nature helps balance heat and lightly support the Liver and digestive system.
In a pot of boiling water, cook the pasta until it is al dente or almost tender.
Meantime, heat the wok and add the oil and garlic.
Add the zucchini and toss lightly until at least one side is golden.
Strain the pasta but reserve 1/4 cup of the water.
Add the pasta to the wok along with the salt, pepper and butter.
Continue to toss for 1 minute so flavors mix.
If the pasta is too dry, add the reserved water.
Option: Top with parsley or cilantro and a handful of toasted pine nuts.
Save leftovers for a soup base.
