Don't throw the rind of the melon away any longer. Here's a delicious warm dish that packs great healing value.
Allow the wok to heat while you remove the green from the watermelon rind.
Note: keep the white flesh and some of the pink melon.
Add the oil and salt to the heated wok.
Slice the ginger and the white of the scallion into 2 inch pieces and add to the oil.
Add the watermelon and stir.
Add the mushroom seasoning and the sugar. Stir again. then cover for 3 minutes.
Remove the cover and add the scallions. Toss gently then serve.
