What better way to enjoy your summer watermelon than on pasta. So satisfying, cooling and nurturing to your Stomach Qi.

 

Yields1 Serving
 1/4 pound of cooked pasta
 2 teaspoons of butter
 salt to taste
 1/2 cup of sliced watermelon
 2 teaspoons of olive oil
 6 mint leaves, chopped
 pepper to taste

Cook the pasta and then drain into a bowl. While it's hot add the butter and salt. Toss until the butter melts.

Add the watermelon slices and mint leave. Toss gently, then add the oil and toss well.

Allow the flavors to mix by tossing several times. Add cracked pepper and enjoy!
