
WARM ROASTED FENNEL
Fennel is great for adding a warming essence to the body. A note about lemon: it brightens flavor, gently supports the digestive system, and helps prevent heaviness after eating.
Sea salt, to taste Zest of ½ lemon 1 tbsp fresh lemon juice (to taste) Optional garnish: chopped parsley or dill
Fennel bulb, trimmed and sliced into cut 1/4 inch wedges
2 Tablespoons of olive oil
1 Teaspoon of salt
1/2 Teaspoon of ground pepper
1/4 Teaspoon of coriander
1/2 lemon

Heat the over to 400 degrees.

Toss the fennel with all the ingredients except the lemon.

Arrange, single layer in a baking dish. Then bake for 20-30 minutes until tender.

Remove from oven and squeeze the lemon on top of the baked fennel.

Option: Serve over rice or other grain of choice.
