WARM ROASTED FENNEL

Category

Fennel is great for adding a warming essence to the body. Lemon brightens flavor, gently supports the digestive system, and helps prevent heaviness after eating.

Yields1 Serving
 Sea salt, to taste
 Fennel bulb, trimmed and sliced into cut 1/4 inch wedges
 2 tbsp olive oil
 1 tsp salt
 1/2 tsp ground pepper
 1/4 tsp coriander
 1/2 lemon (zest of ½ lemon, 1 tbsp fresh lemon juice)
 Optional garnish: chopped parsley or dill

Heat the oven to 400 degrees.

Toss the fennel with all the ingredients except the lemon.

Arrange, single layer in a baking dish. Then bake for 20-30 minutes until tender.

Remove from oven and squeeze the lemon on top of the baked fennel.

Option:  Serve over rice or other grain of choice.
