WARM CHICKPEA SALAD

In Chinese Medicine, chickpeas support the digestive system by strengthening Spleen Qi and gently promoting regular elimination.  Feel free to embellish this recipe by adding other lightly cooked veggies such as red peppers.

Yields1 Serving
 1 can of chickpeas, drained
 2 tbsp of oil
 ½ tsp of salt
 1 clove of garlic, minced
 1 tsp of ginger, finely chopped
 1 tbsp of lemon
 Cilantro to taste

Heat a frying pan or wok and add the oil, ginger, garlic and salt. Don't let the garlic turn brown.

Add the rinsed chickpeas and lightly toss until warm.

Add the cilantro and lemon toss again and serve.
