VEGGIE AND EGG SQUARES

Eggs represent harmony. They contain all the information of life. By mixing eggs with common ingredients found in your refrigerator you will create a nutritious dish and the left overs are equally as good.

 8 eggs
 2 teaspoons of salt
 2 Tablespoons of grape seed oil
 2 diced red peppers
 10 diced mushrooms
 2 diced scallions
 1 diced tomato
 1 handful of chopped dill
 Black pepper to taste
 Dash of Chinese cooking wine
 1 Tablespoon of butter

In a bowl beat eggs and one teaspoon of salt. Set aside.

Heat wok or skillet. Add oil and one teaspoon of salt.

Then add red peppers, mushrooms and scallions to the skillet and lightly sauté for 30 seconds.

Add the vegetable mixture to the eggs and mix.

Add dill and remaining salt, pepper, and wine to the eggs.

Grease the sides and bottom of a casserole pan. Pour mixture into pan and bake one hour at 350 degrees.

Serve hot or cold.

For alternate tastes substitute basil for the dill! This is always a big hit and makes great leftovers.
