TRANSFORMING EGGS

In Nature, an egg fosters the transition into new forms of life. In any season, we can connect to this message of transformation. Look at the Five Element Framework to see that different colors connect to the function of the organs. Which ingredients do you have that will support you?

Yields1 Serving
 1/2 head of cabbage (this will make enough for other meals)
 2 tbsp oil
 1 tsp mushroom powder
 1 tsp salt
 Drizzle of sesame oil
 1 scallion
 3 eggs
 1 plum tomato (or 5 cherry tomatoes)

Pour the cabbage into a side dish.

Into the same wok, add one tbsp of oil and 1/4 tsp of salt (or just a sprinkle). Turn heat to low.

Beat the eggs in a bowl with 1/3 tsp of mushroom powder.

Add the eggs to the warm wok, and continue to scramble. As you scramble them, the eggs may start to get very frothy. This is a good thing!

When the eggs are just about cooked, add your desired portion of cabbage.

Add the sliced tomatoes. Mix and serve.
