TOFU POPPERS

Tofu has been eaten for thousands of years in Asian countries to promote health and longevity.

 7 ounces of extra firm organic tofu, cubed
 4 Tablespoons of ricotta cheese
 1 ½ cups of seasoned bread crumbs
 Grapeseed oil

Preheat the oven to 400° F (convection).

If you don’t have a convection oven, set your oven to 425° F.

Coat a small baking sheet with grapeseed oil. Line a plate with paper towels.

Place well-drained tofu cubes on the paper towels, and cover the tofu with another paper towel.

Press down gently to remove as much water as possible from the tofu.

Using a spoon, “paint” all sides of one tofu cube with a thin layer of ricotta cheese.

Then roll it in the breadcrumbs. Place the cube on the prepared baking sheet.

Repeat with remaining tofu. Cook for 30 minutes, flipping once to brown both sides.

Serve warm, either plain, or with the dipping sauce of your choice.
