Tofu or soy is great to support healthy Kidney function. This versatile food can be added to soups, mashed and added to noodles, and fried. Mushrooms have anti-inflammatory properties and are said to help the immune system.
In a wok, heat the oil and add the garlic and 1/2 of the salt.
Add the mushrooms and lightly saute. (2 minutes)
If using a hot spice, add it now.
Add the cooked mushrooms to the boiling water.
Add the tofu and mushroom seasoning.
Allow the flavors so mix for 2 minutes.
Add the soy sauce and stir.
Add your choice of greens and mix one time.
Remove the pot from the flame and drizzle the sesame oil over the soup.
Do not stir.
Add the scallions and serve
For a more hearty meal, spoon the soup over rice noodles.
