Combine strawberries and sugar in a bowl, and let stand for 10 minutes.
Meanwhile, combine quinoa with 2 cups of water, bring to a boil.
Lower the heat, cover and continue to cook for 10 -15 minutes until water is absorbed.
Remove from heat and stir in the peanut butter and apple juice.
Stir in the strawberries and top with the nuts.
