
TENDER EGGPLANT
Steamed eggplant with soy-garlic sauce supports digestion and smooth Qi flow.
In traditional Chinese medicine, eggplant helps clear mild heat and gently support the Liver.
1 Eggplant, cut into strips
1 tbsp of soy sauce
2 tsp sesame oil
1 tsp of cooking wine
½ tsp of mushroom seasoning
¼ tsp of sugar
2 cloves of garlic,minced
2 tbsp of hot oil

Steam the eggplant for about 10-12 minutes or until tender.

Meanwhile, make the sauce by combining soy sauce, sesame oil, wine, mushroom seasoning, sugar and the garlic.

When the eggplant is tender, transfer it to a plate and pour the sauce over the top.

Heat the wok or pan and add the oil. When the oil is very hot, pour it over the eggplant.
Top with greens and serve.

This dish works very well on its own or with rice.
