
RED LENTIL SOUP
Red lentils help to regulate water and tonify Qi. They support the Kidney, Heart, Stomach and Spleen.

2 tablespoons of olive oil
2 teaspoons of salt
1 onion chopped
1 tablespoon of chopped ginger
1 clove of garlic, chopped
4-5 cups of boiling water or vegetable broth
1 teaspoon of mushroom seasoning
1 cup of red lentils
½ cup of chopped plum tomatoes
black pepper
optional: handful of cilantro

Heat a heavy pot. Add the oil and salt. When heated add the onions, ginger, and garlic.
Cook for 3-4 minutes or until tender.

Add the boiling water or broth, mushroom seasoning, tomatoes and lentils. Cover and let simmer for 25 minutes.
Season with additional salt if necessary.

Add some black pepper and cilantro and serve.
