
MUSHROOM AND ASPARAGUS WITH DILL
Mushrooms connect to the message of transformation through their relationship with the Earth. This energy directly benefits the Stomach function.
Handful of pine nuts
3 tbsp avocado oil or olive oil
8 oz mushrooms, sliced
Pinch of salt
1 bunch asparagus, sliced into thirds
Black pepper
2 tbsp fresh dill, chopped
Lemon zest from 1/2 lemon
Optional - 1/4 cup rice

Add the oil to a wok or large pan and add a pinch of salt and the pine nuts. Toast the nuts until slightly brown.

Add the mushrooms and cook for a few minutes, until browned. Add the asparagus and a little splash of water. Add a pinch of salt and black pepper, and cook while stirring occasionally.

Once the asparagus is tender, add the dill and lemon zest, and stir. Serve alone, with rice, or arugula salad.
