MUNG BEAN MORNING TOAST

These funny little green beans have been revered for their medicinal and culinary virtues for thousands of years in China and Southeast Asia. Mung beans are one of the most powerful foods that benefit your health all-around. This is a great way to use left over mung beans.

 1/4 cup mung beans, rinsed, drained, and boiled
 1/2 avocado or 1 heaping tbsp softened butter
 1/2 tsp mushroom powder
 Optional choice of topping: diced tomato, drizzle of hot sauce, or black sesame seeds
 Slice of bread

Cook the mung beans.

Add the mung beans to a bowl with the avocado or butter, and add the mushroom powder. Mash with a fork to combine to make a creamy topping.

Spread the mixture onto the toasted bread and enjoy plain or with topping.
