MUNG BEAN MINT TOAST

As a staple in Chinese cooking, mung beans help clean toxins from the digestive system. Adding a touch of mint, this recipe is also supportive to the Lung.

Yields1 Serving
 1/2 cup of mung beans
 1 tsp olive oil
 2 mint leaves, chopped
 1 tsp lemon juice
 1 tsp ricotta cheese
 Salt
 Bread (sourdough or olive bread is delicious here)
 Sweet or savory fruit (avocado or berries)

Cook 1/2 cup shelled mung beans in boiling water, about 30 minutes so that the beans are a little on the mushy side. Once finished, drain the water (Note that this portion makes enough for leftovers).

Spoon three tablespoons of the beans into a separate bowl, and mash with a fork. Add the oil, lemon juice, mint, ricotta, and a pinch of salt and continue to mash until combined.

Spread the mung bean mixture onto a toasted piece of bread, and top with sliced fruit. Sprinkle additional salt to taste.
