
Add the lentils and salt to boiling water.
Lower the flame to a simmer.
In a separate pan, heat the oil and saute the onions and carrots until slightly cooked then them to the lentil mixture.
Allow the lentils to cook for 20 minutes or until the desired tenderness.
Note: If you like, you can add 1/4 cup of rice or quinoa when adding the lentils.
