MASTER LU’S FRIED RICE
1 diced onion
1 egg, scrambled
1 cup of rice, cooked
Handful of pine nuts
1/3 cup of cooked carrots
1 tsp salt
1 tsp mushroom seasoning
Pepper to taste
1/2 cup of leeks, sliced
Splash of cooking wine

Heat the wok with half of the oil and roll it along the bottom and sides of the wok. Allow the oil to become very hot, then add the remainder of the oil.

Add the onions and toss. then add the egg. Mix well and add the rice.
Continue to move the rice so the mixture dries out.

Add the pine nuts, and carrots. Toss well continuing to separate the rice kernels

Add the salt, mushroom seasoning and pepper and continue to blend and add the leeks.

Add a splash of cooking wine and serve.
