FIG BALSAMIC VINEGAR

Eating foods that are sour and pungent, like vinegar, is a great way to support your Liver function. This vinegar mixture can be used as a drizzle on anything from Brussels sprouts to ice cream! Powerhouses of healing essence, figs have been used to promote longevity for years and can moisten the Lungs to relieve persistent coughs, benefit the Large intestine (has a laxative effect), and generally ease swelling while detoxifying the body.

 2 cups of balsamic vinegar
 4 Tablespoons of butter
 1 cup of dried, unsulfured figs, sliced (about 8 figs)
 1 Tablespoon of honey

Place the vinegar in a large saucepan over medium heat.

Add the butter and stir. Let cook for about 10 minutes.

After the mixture begins to simmer, reduce heat to low.

Add the figs and stir every minute or so with a wooden spoon to prevent the vinegar from burning.

Cook 20 minutes longer, or until the figs have broken down and the vinegar has been reduced to 1/3 of its original amount.

The mixture will continue to thicken as it cools. Remove from the heat.

Stir in the honey.
