
Add the string beans to a pot of boiling water. Blanch until slightly tender, then strain and set aside.
In a hot wok add 2 teaspoons of oil, ginger, and salt. Add the string beans and toss for 1 minute. Remove the beans from the wok and place them in a serving dish.
Rinse the wok then add the remaining 1 teaspoon of oil to the wok. Add the cantaloupe and toss well until the fruit is heated. Add 1/4 teaspoon of mushroom seasoning, and toss again.
Add the string beans.back into the wok and blend well with the cantaloupe
Add a splash of wine, toss one more time and serve.
