CUCUMBER AND BEAN SALAD

Cucumbers add a refreshing component to any meal. They also grow on vines so they have the same personality as Liver energy!

 1 English cucumber, sliced
 1 can kidney beans or black beans, drained
 1 clove garlic, minced
 1 teaspoon salt
 1 Tablespoon apple cider vinegar
 1 sprig mint or cilantro

Slice the cucumber in half. Then cut each half on an angle in thin, bite-sized slices.

Add the cucumbers to a mixing bowl. Add the garlic and salt. Mix well.

Then add the apple cider vinegar and mix well. Let the mixture stand for 10 minutes.

Adjust the salt and vinegar according to your taste.

Next add the beans and mint. Toss well and enjoy!
