Rice with tomatoes and mushrooms helps nurture the center and support healthy digestion. In Traditional Chinese Medicine, warm simple foods help the Stomach work smoothly and keep Qi moving.

CREAMY RICE
3/4 cup of boiling water
1/4 cup rice (rinsed, drained, and cooked)
1 tsp of butter
Salt
1 tbsp oil (we used sunflower)
Handful of pine nuts
Handful of cherry tomatoes, halved
Handful of mushrooms, sliced (any kind you wish!)
Black pepper

Add the rice to the boiling water and lower to a simmer. Add the butter.

To a warm pan, melt the butter and lightly brown the pine nuts. Add them to the rice as it's cooking.

Heat the wok and add the oil and salt. Saute the mushrooms and tomatoes.

Add the rice to a bowl and top with the vegetable saute. Sprinkle with black pepper to taste.

Optional: Stir fry the mushrooms and tomatoes then add them to the uncooked rice and allow the flavors to blend.
