CORN SALAD

This colorful and flavorful dish is a great way to support Stomach and Heart function.

 2 ears of corn, husked or 2 bags frozen corn
 1/2 red pepper, diced
 1 scallion, diced
 1 kiwi, diced
Dressing
 1 lime, juiced
 1/4 cup olive oil
 salt, to taste
 pepper, to taste

In a large mixing bowl, add corn, peppers, scallion and kiwi. Toss gently.

In a separate bowl make the dressing by mixing lime, oil, salt and pepper. Add the dressing to the corn mixture.

If you'd like a bit of heat, add a diced jalapeƱo pepper.
