CHINESE RED DATE SPREAD

The cultivation of red dates in China can be traced back 4,000 years - maybe even 7,000 years. As an ingredient, red dates have a great impact on digestive health. Stomach nurturing foods like red dates strengthen the body's vitality.

 9 red dates
 1 inch piece fresh ginger
 English muffin
 Salt
 Optional: half a plum

Add a cup and a half of water and the chopped ginger and red dates to a pot. Boil for about 30 minutes or until the dates are very soft.

Optional, to support the Liver as well as Stomach, add chopped plum in to boil.

Pour the water in a glass, to drink or to use for rice.

Remove the dates from the pot and let cool.

Separate the pits from the fruit and mash the dates into a paste. Add a splash of the warm spice water to soften the dates.

Toast an english muffin and add butter, and then press the red dates on top. Sprinkle with salt.
