A favorite and versatile food recommended in our Dragon’s Way program, Chinese pearl barley (also called Job’s tears or coix seed) has been proven to contain anticancer and anti-obesity properties. It is also very beneficial for skin and digestive issues. You can purchase Chinese pearl barley at your local Asian market.
Chinese barley, rinsed well before cooking
water (5 times the amount of barley)
1 apple, finely chopped
pine nuts, walnuts, or pecans, lightly toasted
scallion, finely chopped
1 Tablespoon mayonnaise
1 heaping Tablespoon of marmalade jelly
sugar, to taste
Cook the Chinese barley for 45 minutes to 1 hour.
Drain off any remaining liquid and allow the barley to cool.
Healing Tip: For a refreshing and healthy drink, reserve the liquid from the barley, add honey to sweeten, and you’ll have a delicious healing beverage.
Mix all the ingredients and toss with the dressing.
Eat at room temperature or chill and serve.
For variety, add one or more of the following ingredients: candied ginger, diced, dried cranberries, cucumber, diced
