
ARUGULA SALAD
Arugula’s bitter taste clears Liver Heat and moves Qi, which in turn helps the Heart.
Combined with vinegar, and garlic, this salad supports digestion, and inner balance.
Large bunch or arugula, washed
1 tsp vinegar
1 tsp soy sauce
½ tsp of sugar
1 clove of garlic, minced
½ tsp mushroom seasoning
2 tbsp sunflower oil

Add the arugula to a large bowl and set aside.

Add all the remaining ingredients except the oil to a bowl. When mixed well, toss over the arugula and mix well. Next, drizzle in the oil and toss to combine.

Eat alone or add your favorite, fish, chicken, tofu or fruit for a complete meal.
